Panel from the UI vanishes in Unity 2019 when I maximize Game Window under free aspect?

    I have always had issues with Unity's UI system...almost made me want to jump to Unreal Engine.

    I have this really annoying issue when I create a Panel UI element when I maximize the Game Window...the panel completely disappears.

    I have my canvas set to Scale with Screen Size at 1920 and 1080.
    The Render mode under Canvas set to Screen Space Overlay with Match Width and Height.


    And when I maximize my game window...Panel vanishes...completely. Very annoying...been trying to work out how to solve this issue for the past hour.
