Appearances can be deceiving. Choosing "random" games, not necessarily at random, and riffing on or complaining about them is something people enjoy.

They may have been picked for being something that is interestingly bad, or just something the person feels that day they can make entertaining commentary about.

So the question is, what are these people's method of operation?

I don't think you find the answer speculating here and even if you did find the answer, how would you know if you did?

Probably every youtuber is doing things their own way. Probably most of them have no actual method. They just do whatever whim they have that day. Like boast about their "management team" and make ridiculous offers to people they deem insignificant. Or maybe the next day they watched some feel-good video about a homeless persons life transformation and so they're doing everything for anyone. This is people we are talking about here -- not deconstructing an engineered piece of equipment. This is why you need some form of leverage that most people recognize. Money. Short of that, carpet bombing is all you can do, and when you make contact the goal is to figure out what that individual person is all about and try to find a way to give them what they like in abundance. It's a skill, it's an art. This is why there are people whose sole job it is to do stuff like this.
