maybe it cannot be texture type sprite or one with multiple sprite mode?
test if regular texture2d type works, or cut it out as separate png image.

When I change the type from Default (Texture2d) to Sprite (2d and UI), the image still remains texture 2d

if spritemode is single then it works (for the splash screen background image field at least)

The splash screen needs a sprite type. From the screenshot you are using a Texture with multiple sprite mode, you need to open the sprite editor and define some sprites, otherwise set it to single sprite mode.
