Why does updating to a new major release of Unity reimport every asset in my project?

    I was wondering what it is about updating to a new version of Unity (2019.1 to 2019.2, for example) that causes Unity to reimport every one of my assets? This process takes about an hour for a project of about 6GB in size, most of that time spent with a wait message telling me it's "crunching" this asset or that.

    Does the asset hashing algorithm change with every major Unity release? If not, why does this reimport/crunching happen? Is there any hope that this won't necessarily be the case in future Unity releases?
