If I have a prefab that is not currently in a scene, and I click on it, it appears in the editor. Do I need to double-click it still, or will editing it after I've clicked on it once produced the same result?

Double click a prefab from the project window if you want to open the prefab mode in scene view.

If you click on it once, the root object will show up in the inspector. Any changes made here will indeed apply to the prefab. The only limitations are you won't be able to:
    • View the prefab in scene view
    • Make any changes to any objects other than the root object of the prefab.
