There is an option in Physics2DSettings where the default physics material 2d can be specified for those colliders that do not have any material set on them.

What are the parameters used for friction and bounciness if the physics material 2d field is null in both, the Physics2DSettings and the collider?

I was wondering that myself. So I tried creating a new 2d Physic Material and in 4.6.4 the values set for a newly created material are bounciness 0, friction 0.4
Maybe these are also used when the material is (Default)None
