What is the best method to direct a fist/foot to a specific point during an animation?

    In the above video, you can see the 'stamp' animation where the foot continues through the enemies body; I would like to be able to direct the foot to a certain point on the target (ie. head) during the animation. Currently I am thinking of using inverse kinematics but I am wondering if there is an easier way to achieve this?
