I know it has something to do with blending, but what exactly is it?

If it's 0, the animation will basically not be applied; if it's 1, the animation will be fully applied. In between, it's "sort-of" applied; a position that's animated in that layer, for example, will be halfway between its "default" position and the "animated" position if the weight is 0.5.

I see. So what use would there be to use animations only half-way?

It's mostly for smoothly fading in and out out animations.
