Creating a release build for Linux from the Linux editor (2019.4.1f1) produces LinuxPlayer_s.debug and UnityPlayer_s.debug alongside the executable etc. I can't find any documentation of what these files are for, and they're messing up my installation process (because they look like executables). So: what are they, are they necessary (the executable still runs if I delete them), and if not, is there any way to stop them being created?

They are debug symbols and yes you can delete them they are not required for the build to run, at the moment you cannot prevent them from being copied over but you could add a post build script to delete them before you ship your game
