Would the webplayer be helpful for patching a multiplayer game? Like say I am have a website hosting the webplayer, can I just switch out the webplayer build and when people go on the site they are now playing the new version? Am I understanding that correctly?

Keep in mind that they have to download the whole game-file again then.
If you own Unity Pro, the use of AssetBundles might be very helpful.
