UI Text looking really bad in Screen Overlay Canvas

    I'm on Unity 5.4.0f3 - building to iOS...

    None of the threads relating to similar issues have helped me... this image is with standard Arial font - it is the full width of an iPhone5s screen - so that's 640 pixels - and it looks like this :( ...

    I've shown the canvas setup here... and i've tried every combination of scaling up and down the Text fields and Font sizes...it always looks just as bad.
    I've tried importing another Arial ttf - making an editable copy of its Ascii characters - and using that instead - looks pretty much the same.
    It's a pretty old project and I'm just adding some of the new UI to it now... not sure if that's relevant.
