Text color is unreadable on Amazon Kindle touch screen keyboards

As per the attached screenshot, the touch screen keyboard that popups has a field at the top where you can see the text that you type but the color is such a light grey that it's near impossible to see against the white background. The user needs to be at least able to see this as in this case, the actual Unity UI object where the text will be entered into is hidden by the keyboard itself.

I know this may well indeed not be a Unity issue but rather an issue with the Kindle itself.

Does anyone else have the same issue and/or a suggested fix or work around?

I'm using a Japanese Kindle (Japanese keyboard in English mode) with a game build and deployed from Unity 5.3.5p1.
