Our Tech updated our unity...I backed up all my files on hard drive, but wouldn't you know it the drive got corrupted. most files ie scenes are empty. I had completed projects for all Create with Code that I used with students.

Does unity offer completed files for Create with Code? I really don't want to complete the whole course over again. I guess I will if I have to but could use those 40 hours with my students not recreating the whole course.

    any help is appreciated.

Sorry to hear the news, the best thing is to contact Unity directly with your question/concern. Myself, i have 3 backups of any project i work on, as backups can fail/corrupted, so if i have 3 chances are im good (i have 2 hard drives and cloud).

Lastly, sorry to sound negative, but your "tech" isnt well informed with Unity, and should learn more, or dont touch it. Most Unity users follow a rule "dont update Unity for the life of any project, as heres your example why...

    I also add to above.

Ask your tech, to install previous version of Unity. Also keep new one. However, make sure, your tech knows what is doing and discuss any software update with users.

    However,
You should teach about principles and practical use of git and version control and apply it in practice. You could avoid being in such position, where you lose your project, or part of it.

It is unacceptable to teach anyone, withouth that knowledge and practical skill.

Also about any means of backing up files.

Please tell me you are not teaching people whilst not using source control? Because if you are using source control, its as easy as reverting / cloning down the repository again

If you are not using source control, well then this is exactly the reason its literally development 101 in most courses. I highly recommend you learn and use it, to prevent issues in the future and prevent your students from picking up dangerous habits.

Simply put, this shouldn't be an issue if you are doing things correctly. Its important to learn the correct way if you are going to teach people, otherwise you are just passing on incorrect knowledge which unfortunately there is already too much of in this field.

Everything about this screams high school (secondary school outside of the US). An IT department that only thinks to update the software without considering the consequences, and a teacher that isn't aware of best practices for backups.

Your students shouldn't require another 40 hours to recreate the contents of those tutorials unless they weren't learning anything. Worst case I see nothing in these tutorials that should take an instructor 40 hours to recreate.

For example this section advertises itself as taking over an hour but it's only a few minutes of actual work.

And considering this, I won't be jumping on the bash-the-teacher bandwagon.

It's unfortunately common for schools to have teachers only a few topics ahead of the students, and while I agree that it's unfortunate, the teachers aren't at fault there. Same deal if a teacher wants to give students something they're excited for but isn't supported by actual curriculum, and other various circumstances, so long as the teacher doesn't misrepresent their level of expertise.

If Create with Code doesn't cover version control itself, then I wouldn't expect a high school teacher following along with it to magically know it.

On a whim I tried a slightly different search and came across the following repository. To download the assets you just need to click the green button labeled "Code" and then click "Download ZIP". I don't know how complete all of it is or how closely it follows the tutorials but I briefly tried Prototype 5 (aka Unit 5) and it was playable.
