It's been since februrary that this bug is happening. Changelog for 2020.3.5 states that it is solved but it is not.
    • Shaders: Fixed sprites using default sprite material not rendering in the Editor when build target is set to console (1318066)
Also there's no link to that issue number, nor it's found on Issue Tracker.

Repro case is straight forward: Create new project for console and put a sprite on a scene. It won't be rendered until you change the default-sprite material.

This also affects other parts of unity such as Tilemap Palette window, that won't show any tile in the palette since it uses the default-sprite material.

Just to make this clear: this is about the sprite rendering IN EDITOR

    EDIT:
Just tried to repro using your exact steps and everything works fine here for me using Unity 2020.3.9f1

    UPDATE:
Tested a second time again on all console platforms
Everything is working fine here, completely fresh project created with Unity 2020.3.9f1

Are you sure you arent using some old Default-Sprite material by chance ?

    Old Text:
There are already long discussions about this issue on the console forum ...
Will check if the bug is still there for all consoles or only the Switch

Sorry ... my initial post ( the text you quoted ) was wrong

i cannot repro this on a clean plate fresh project using 2020.3.9f1 ( set to Switch, PS4, Xbox build targets - everything keeps working )
Initially i had the same problem, but only on a project i upgraded several times already from older unity versions

Will try upgrading to 2020.3.9 and report back, might take a while since I'll have to install a dev enviroment for that version. Fingers crossed

Maybe its a good idea to wipe the projects Library folder with this update
at least if the unity update itself doesnt solve the problem, maybe there are still some Sprites-Default shader/material artefacts from the bogus previous Unity versions lying arround in there

I've taken some time to backup and do a fresh instal of both Unity 2020.3.9 and the console specific SDK's and the project opened in the new versions without the bug. No idea why it didn't work in previous version but it seems to be fixed. Weird
