I have 1 sprite and it has a move, hit, and idle animation but they're all in different files.
File 1 will have the move anim.
File 2 will have hit, etc.

    Does this impact performance?

The different animation files will create more draw calls but only if they run simultaneously. Since they are all running on the same char and will never be active at the same time this should not affect your performance at all.

No, not at all.I have tested 3 maybe 4 games in my Lg g2 android phone. One of them had about 300mb uncompressed assets and was running at 30 fixed fps without changing the shaders to mobile.Do a youtube search for unity mobile games and you will see that a lot of 3d games run at android/iphone devices.
    What i mean is...build your game.Just finish it.Then consider about performance .
