I have unity 2019.2.11.f1 and 2018.4.14.f1. I got if for a two projects in unity learn. I am trying another and it recoments that I use 2018.3. Will I have to get a different unity version for each project?

You don't have to but I recommend grabbing the version a project is developed for if the closest version you have is more than a year old (eg if a tutorial recommends 2017.3 and you have 2018.1 it's likely fine, but if you have 2019.1 it's best to grab 2017.3).

    Generally I agree with @Ryiah.
But if I would be learning from scratch based on tutorials, I would definitely try get Unity version, matching tutorial version, as much as possible.

For someone who is starting, is impossible to know, what has changed between Unity versions. Small thing like change in naming of Unity API functions, or depreciation, can bring headache.

While this bring another pain, in form of installing new Unity versions, once getting familiar with recognizing differences between Unities, discrepancies between versions wont be as much of hurdle anymore.

When I load the project in 2019.2.11.f1 it wont load any the hiarchy(the assets load) that shows in the lesssons that go with the project (3d game kit lite).
I cant open it in 2018.3.14.1f (I have donwloaded it) from unity hub, it opens directly in 2019.2. I tried keeping(save) the project and opening it up in 2018.3 but i get an error. Something about unable to load packages.

I have not tried those. For me it was an explanation in the first step that I did not understood. Read the first lesson again and look for any instructions you might have gotten wrong the first time. Also getting the recomended version of unity for the project helps, I have been told.
