Mac installation doesn't normally let you specify an install directory so worried this will overwrite my production editor - any way around this?

Rename the existing editor folder from "Unity" to "Unity <version number>". Now the new one will be installed in /Applications/Unity, which you should immediately rename to "Unity 5.4b19" or whichever version you added.

Yes that is what you should do for Mac installations so that you don't overwrite your production installation
