I've read that Unity collects tonne of data about the mobile devices where its games are installed. Is there any way that developers can access this data to improve their games? I basically want to know if a game is running on an old device or a device that is known to have problems.

    Cheers!

So if I register for the analytics service (which is currently free?) I can potentially find out if my Unity game is running on a particular mobile device that has more than 1 more core?

That's the plan...please see the Amsterdam Unite Keynote if you want to see more about what they showcased.
