After replacing all of my trees with Speedtree 8 equivalents and testing. I came to the sad realization that on terrain, SpeedTree 8 is a step down in quality from Speedtree 7. Up close, the trees are fine - but when you start to get farther away, the "alpha cutout" issues start to popup, and they all get very speckled. And the lighting seems off somehow as well - its like the ambient occlusion isn't working as they all get brighter.

Anyone have any hints on getting the most out of Speedtree 8, besides the obvious "go back to Speedtree 7 trees" (which I'm honestly considering)?

Which render pipeline are you using? You could try tweaking the LOD settings on the SpeedTree assets themselves. The "brightness" aspect might be subsurface scattering. Try disabling that on those LODs
