I was thinking how convenient it would be to be able to group strings/assets within a table.

You could, for example, create a table containing all the dialogue for your characters, and within the table, groups containing the dialogue for each character:
    • Table Dialogues:
      a. Character A (Group):
      1. Dialogue1 (String)
      2. Dialogue2 (String)
      b. Character B (Group):
      1. Dialogue1 (String)
    • blah blah blah
Or a table for the interface arranged in the same way with groups for general, settings, extras, etc. Not sure how feasible is though, but I think it would be a great feature to have.

We have combined string and asset tables in 2.0 into Resource tables. Part of this adds more flexible entries with the potential to group them. We plan to do this as a better way to handle platform overrides instead of metadata. So could be possible in the future ;). Still early days though.
