    @JohnGate I agree with @Vuforia-Strasza ( linear interpolating the position or animating the position to simulate physically dropping some object ) but wanted to add that if you're thinking of simulating more physics behaviour you could also consider using Unity's physics system. That's what it's for. https://docs.unity3d.com/Manual/Physics3DReference.html If you're only going for that drop movement than Vuforia-Strasza's recommendations are the way to go because they don't add the overhead that comes with enabling physics in your project.
