excavator simulator

    how to create an excavator simulator, what do I need to imitate this hydraulics, I know that I use joining, but I doubt that this is all there is more to dig into?
    please explain what else to look for

    Start with a few hinged-together objects in Unity. Getting hinged physics objects to do what you want is already gonna be hard. Getting them to meaningfully interact with the rest of the game is gonna be REALLY hard.

    When you have a hinged object fully moving and articulating under user control, and all its interactions behave the way you want, only then consider if your game would get better if you also simulated the hydraulic fluids and whatnot.

    I would like to know how they force objects with a joint to move as if they move them without a rigid body

    This sounds like an excellent place to begin your research. The folks over in the Physics forum might even have some pointers to good tutorials. Personally I would just start tinkering because there is no better game engine in the world for tinkering and learning than Unity3D.

    The guys over at physics will definitely be able to help you there. What you are describing is a physics problem involving no small amount of trigonometry. I can think of no better forum to ask than them. But yeah, trigonometry at least, fluid simulation at most.
