The Unity IAP api seems to work with either Apple AppStore, Google Play Store, Amazon Store or Windows Store. The developer has to define products in each of these stores.

Is there a Unity Store where the developer would define the list of products only once ? Then regardless on which platform the game would be released, Unity would collect the purchases and provide the proceeds to the developers instead of the aforementioned stores. This would also make the api integration much faster & easier.

No, because Unity does not collect the purchases. Unity IAP acts as an API and talks to the (public) store backend, not more or less. If Unity would collect your purchases, it is likely that you would not only pay 30% to the App Store but also a share to Unity as well.

The IAP Catalog in Unity IAP has a button to export your products to the Apple App Store and Google Play. See this documentation. Generally, if you do not have hundreds of products, it is simpler to do it manually though.

I think there is a misunderstanding here.
I would like to bypass AppStores from Apple, Google, Windows and Amazon.
Think of them being excluded completely out of the picture.
How come Unity did not create its own Unity Store where devs define their products and Unity Store would charge the consumers. It would be a win win for Unity and developers. Much less hassle for devs to integrate the IAP and Unity would make money as well.

Thanks for the link to the docs. I have seen it already. That is not what I am looking for. Probably I will have to go down this path though.

Unity is not a gaming company. It has tried to go in that direction in the past and failed. If you are looking for a Unity Store today, that would basically mean Unity should have invested in a gaming economy 5+ years ago, for the current user base being high enough to even be considered for publishing.

I'm working with Unity since 2010 (as stated below my profile picture), released an asset specifically for In App Purchases in 2015 and provide support to hundreds of customers. But If you do not trust me, of course others can comment too :)

iOS was closed for other stores and also was banned for purchase items outside iOS (only if its crossplatform game and same thing can buy in ios app/game). Same google play, but there was another stores like Samsung, Huawei etc ... this stores are preinstalled on this phones by phone companies.
Before days Unity store doesnt make sence, cannot be install on Apple and user must manually install it on android before install game from it. On desktop you dont need universal store, you have credit card, paypal, skrill, paysafe etc.
But now was new law and mobile systems must be open for alternative stores, ... maybe will be something changes
