    Hi

I just signed up for the service, but i'm kind of hesitating to provide sensitive data such as certificates, etc.

For example, in order to build a "release" version of our android game, we need to sign it with our release key. I am not sure whether i would want to provide this (or anyone else would want to).

What do more people think of this matter? how do you handle it ?

You could create a new certificate/mobile provisioning for adhoc release/test builds with the cloud service. When you want to create a version to upload to the store then you could build that yourselves with your own un-shared certificate. If you then felt that the mobile provisioning was comprised on the unity cloud service you could revoke the certificate it was generated with.
