Why can't you just use File > Build Settings?

Anyways, dynamically building your player is far from being simple functionality. I don't even see a need for this type of implementation... Can this function be called during runtime, or are you trying to extend the editor with it?

Basic CI support for building via jenkins.
It's not only pro's that test their code or automate builds for target platforms.

I would be perfectly happy if there was a command line option for building android, windows phone and ios targets like:

    -buildWindowsPlayer

    for the windows player

I can understand that unity takes a feature that's mainly used by professional developers and that saves them a lot time and make that a pro feature.
If you don't have the money to spend , it just cost you time.
If you have more money then time ... buy pro license.

    It's not that simple.
Automated building is also about quality, something that both indies and pro's find useful.
