I love the new input system, but can't get it to work under Ubuntu. When I try to add a binding, it's blank.

This is true for all versions of Unity that support the Input System. In this case, it's 2021.3f1.

I've resorted to editing the YAML file itself, then those values show up in the bindings list, but I can't add my own via the editor.

I have a vague recollection that this is a known bug and will be fixed in the future.

I don't understand how Unity doesn't see this as a huge bug for Linux users, something worth immediate attention.

I get that as well with Unity 2021.3.5 and running Ubuntu 20.04. It's a bit eratically because once in a while it does work and the next moment it fails again. I would hope it's more a thing of not really getting a grip on why this happens than not willing to fix the issue...
