So if for exemple I have a player and a car in my scene and I want the player to be able to get in the car do I have one camera for the player and one for the car (and switch them on/off) or do I move the player camera in the car ? thanks !

It is entirely up to you. I saw solutions for both. You can even animate the camera to emulate the action of getting in the car. Although if you don't want to spend time on this part, you just disable the player and enable a car camera.
There is no "best practice" attached to it, since everyone do their own way.
Whether you choose to fade out the camera and fade in in the car or animate it, it works either way equally well.
