Try the video linked to in this thread, it details working with the scriptable render passes that 2019.2 (?) introduced
They are not possible to set in Shader Graph yet - you can however mask scriptable render passes with stencils starting at 2019.2
This helped me with getting some basic stencil ops working without having to muck about in hlsl all the time, great update!
